Look who’s at it again! Meghan Telpner*, nutritionista extraordinaire, has written a follow up to her popular UnDiet handbook. Now we have a full on UnDiet cookbook to enjoy!
The images** in this cookbook are like none I’ve ever seen before. And the recipes are outstanding, good luck trying to choose the first one to make. For me it was a no brainer, a smoothie! I can tell you that her recipes and guidance are providing more than just ideas for her followers, they are providing people with a way to change their minds and bodies for good. My favorite statement from her is this “No amount of green juice can fix the negative thoughts we let spin in our minds.” If you’re eating a healthy diet but miserable about your diet or anything else in your life you’re doing yourself a disservice. Turn that frown upside down and get going!!
My two young boys actually love avocado in their smoothie so the recipe below was a no brainer to serve to them. I, on the other hand, have a severe allergic reaction to avocado and therefore couldn’t partake. My whole family gave it rave reviews, maybe you’ll step out of the box and give it a try, too?
I [Heart] Blueberry Blend
Nut-Free
Soy-Free
Grain-Free
Raw
Prep Time: 5 minutes
Serves 1–2
1 cup coconut milk, almond milk, or water
1 cup blueberries (fresh or frozen)
1 handful spinach
1/2 avocado
2 Tbsp hemp seeds
1 serving protein powder of choice
1 Tbsp shredded unsweetened coconut
2 medjool dates, or sweetener of choice
1 cup ice cubes
Make It Like So
- Place all the ingredients in your blender. Blend until smooth.

I LOVE avocado and have definitely had it in a smoothie before. In fact, I recently got some Strawesome smoothie straws just so I could drink those nice, thick smoothies with ease. 🙂 Avocado makes it creamy and add lots of good fats to your meal.

I LOVE adding avocado to my smoothies, in fact I do that basically everyday!
I make green smoothies for breakfast everyday and always add either coconut oil/coconut butter or avocado to my smoothies to make them creamy and even more delicious! Adding avocado to chocolate smoothies is the best, makes them amazingly smooth, silky and with a super creamy mousse like consistency!

I’m sorry you have a severe allergy to avocado. I’m presuming you can’t use any body products with avocado oil in it? wow. I have never used it in a smoothie but do love it by itself with garlic salt…yum!

I love avocado in my smoothies! With most ingredients, it’s not the flavor of the avocado that you are aware of, but the nice smooth creaminess that it imparts. As long as you don’t go overboard it’s one of those ingredients that can lend great nutrients and texture to many different flavors of smoothie.
I sometimes use half an avocado in place of a banana in smoothie recipes to change things up – still creamy and thick, but with the added benefit of healthy fats!
