Recipe Tuesday – Yoganola
Around our house my boys love what they call “Yoganola”, my homemade granola combined with organic full-fat Thomas yogurt. This recipe adds in the power of chia seeds to help fill you up and the antioxidant power of a small amount of cacao nibs. The sweetness from the honey helps take away the bitterness of cacao and transforms it into chocolate heaven.
Homemade Granola
1/3 cup Wilderness Family Naturals virgin coconut oil
1/2 cup raw, local honey
5 cups whole, organic oats
1 cup of raw sliced almonds*
1 cup of raw sunflower seeds
1 cup of finely shredded coconut, unsweetened
1/2 cup Mum’s Original White Chia Seeds
1/3 cup Mum’s Original Cacao Nibs
Preheat oven to 350 degrees. Combine honey and coconut oil in a small saucepan on low heat until just melted (do not overheat or you risk losing the nutrients from these ingredients).
In a large bowl combine oats, almonds, sunflower seeds, coconut, chia and cacao nib. Pour honey/oil mixture over dry mixture and stir to combine. Spread mixture evenly on a large cookie sheet (make sure it’s not too thin or it will burn easily).
Bake mixture for 30 minutes setting a timer for every 10 minutes to stir the granola to prevent burning.
Allow the granola to cool on the cookie sheet, stir occassionally to prevent sticking. Once cool store in a airtight container.
Serve with your favorite yogurt and berries. Perfect for a quick healthy breakfast alternative to boxed cereals or at snack time.
